This coffee comes from Finca San Pedro, at 1,800 masl in the department of Tolima, where Milton Leonardo Monroy leads a project focused on innovation, sustainability and excellence. An agronomist and third-generation coffee grower, Milton has devoted his work to putting Tolima's coffees among the finest in the world.

This lot is Geisha, one of the most prized for its aromatic complexity, elegance and distinctive sensory profile. It was processed as a natural with controlled anaerobic fermentation lasting between 12 and 72 hours depending on temperature, allowing yeasts and bacteria to transform the sugars in the mucilage into compounds that enhance the coffee's unique aromas and flavours. Mixed drying over 40 days, combining a drying tent and a silo dryer, ensures the stability and preservation of all its aromatic compounds.

This coffee was a finalist in the Colombia Tierra de Diversidad competition, cementing the farm's standing as a benchmark in Colombian specialty coffee.

Is it spelt Geisha or Gesha?

Both spellings are used. The name comes from Gesha, a mountainous area in south-western Ethiopia where the variety originates. When it was documented in the 1930s it was transcribed as "Geisha", and that's the name that caught on when Panamanian farms introduced it to the world. Today many Ethiopian producers and part of the specialty sector favour "Gesha" to stay true to its origin, while "Geisha" remains the most common spelling in the market. Both refer to the same coffee.

How is the Geisha variety different from other coffee varieties?

Geisha is a variety native to Ethiopia that is grown in Latin America under very specific altitude conditions. It stands out for its unique aromatic complexity — floral and fruity notes and a very clean acidity — which clearly sets it apart from more common varieties such as Castillo or Caturra. It is one of the most highly valued varieties in international specialty coffee competitions.

What makes Tolima coffee different?

Tolima is an emerging Colombian coffee region, less well known than Nariño or Huila but with enormous potential. Its combination of altitudes, varied microclimates and innovative growers such as Milton Monroy is positioning Tolima as one of the most exciting regions in Colombian specialty coffee.

How should I store San Pedro coffee?

In a cool, dry place away from direct sunlight. Not in the fridge. Reseal the bag tightly after each use. Best enjoyed within 9 months of the roast date shown on the bag.
